Vegetable Lasagna

Vegetable Lasagna


Ingredients:
  • Lasagna sheets 7 strips, (boiled)
  • Carrots 2 cut in (cubes)
  • Potato 2 cut in (cubes)
  • Onion 1 cup, (chopped)
  • Tomato 1 cup, (chopped)
  • Eggplant 2 chopped in cube & shallow fried
  • French beans 1 cup, chopped
  • Peas 1 cup
  • Capsicum 1sliced
  • Garlic paste 1 tsp
  • Oregano 1 tsp
  • Ketchup 4 tbsp
  • Turmeric powder ¼ tsp
  • Chilly powder 1 tsp
  • Salt 1 tsp
  • Oil 4 tbsp
Ingredients For baghar:
  • White cumin seed 1 tsp
  • Mustard seeds 1 tsp
  • Whole red chili 6
  • Curry leaves 1 stalk
Ingredients Cheese sauce:
  • Flour 3 tbsp
  • Milk 1-1/2 cup
  • Grated cheese 3 tbsp
  • Mustard powder ½ tsp
  • Black pepper powder ½ tsp
  • Salt ½ tsp
  • Butter 2 tbsp
  • Water 1 cup
Method for cheese sauce
  • Melt butter in a saucepan, sauté the flour for a few minutes. Add the milk along with water and continue stirring .Add the grated cheese along with the mustard powder, black pepper powder and salt.Cook until the mixture thickens and turn the flame off.
Method:
  • In pan heat oil, add baghar masala.Now add the chopped onion and fry for 2 minutes.Add all seasonings along with tomatoes, fry well.Then add all vegetables except eggplant, cover the pan with a lid & cook until the vegetables are tendered &the mixture dries.Add fried the eggplant & keep the mixture aside.
  • To assemble in a dish, spread lasagna sheets, vegetables, capsicum, ketchup, oregano, cheese sauce, and cover with sheets, then repeat the same procedure and top it with grated cheese ketchup, and 1tbsp butter.Bake at 180C for 20 minutes.Serve hot.
